Having Tea in the Covid Era
Being safe in the Covid Era is hard but can be done. Maintaining friendships and staying emotionally healthy are also very important. With all this in mind, I invited my long-time friends to a small patio tea. The table was set and the food was ready.
Pretty in Pink Menu
My beautiful crepe myrtle trees are in bloom. So are my pink hydrangeas. So I got out my pink table topper and my pink teacups. The vintage pink rose teacups were given to me by my friend Cheryl, who came to the tea. All of my teas start off with a champagne toast. This time I added a bit of limoncello to the champagne. Not bad. On the menu were currant scones, Devonshire Cream, curried egg salad crescent sandwich, cucumber cream cheese crostini, Earl Grey chicken salad sandwich, mint watermelon salad, mini green salad, limoncello dessert, and iced tea.
Mint Watermelon Salad Recipe from Taste of Home
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 6 cups cubed seedless watermelon
- 2 tablespoons minced fresh mint
In a small bowl, whisk the lemon juice, oil and sugar. In a large bowl, combine watermelon and mint. Drizzle with lemon juice mixture; toss to coat.
Limoncello Dessert from Rachael Ray
- 1 pint lemon sorbet
- 1 pint vanilla ice cream
- 4 jiggers limoncello
- 1 lemon, zested
- wafer cookies, for garnish
- Note: I crumbled shortbread cookies and put in bottom of dessert cup.
Place 1 scoop of lemon sorbet alongside 1 scoop of vanilla ice cream in each dessert cup. Top each serving with 1 jigger of the lemon liqueur. Grate the zest of 1 lemon on each bowl of sorbet and ice cream. Garnish cups with wafer cookies sticking out of the ice cream, then serve. Makes 4 servings.
